Interesting Facts about the Wok
The wok is a traditional cooking vessel in China and other Asian countries.
The wok originally had a completely round form and sat in a fire ring so that
the heat was very strong at the bottom and quickly decreased at the sides. The
foods in the wok are tossed quickly with each other so that just a small portion
has direct contact with the hottest parts of the wok at any one time. The rest
steeps on the cooler sides and gently simmers there.
Foods are not cooked long and extensively in the wok but just stir-fried
briefly. Through this quick simmering, the foods retain the vitamins and
minerals that tend to get lost during normal cooking and usually land in the
drain. In addition, food retains its crispiness and full flavour as a pleasant
side effect.
The wok was probably invented out of necessity: the lack of firewood. As a
result, preparation had to be done quickly. A portioning of meals into
bite-sized pieces also contributes to the quickness.
